Totally new to this, so a little confused: I came home after three days and my water level was down. I checked salinity and it had increased to 38 (from 35), so I added 2/3 gallon (3L) of RODI and the salinity didn't go down! What did I do wrong?

Id second a refractometer. I used a digital salinity reader for my few two month until I realized how inconsistent it was and caused a bunch of problems.
Happens to all of us when starting out! Topping off with just RODI is the right move since only water evaporates, not salt, but it can take a little while to see the salinity come back down especially in a smaller tank. Iβd double check your salinity with a refractometer if you can, just to be

How are you testing? I found the hydro meter style to be inconsistent due to trapped bubbles, salt build up. Refractometer (even cheap one on Amazon) has been very consistent. Clean your test equipment with rodi and try testing again a few more times. Consider a 20% water change, then test again.
It was with a hydrometer. I have a refractometer, just haven't started using it yet. I admit that I haven't cleaned the hydro yet, and it has been dipped, read and emptied five times.
Im new too and started the same with hydrometer because refractometer looked hard. I moved to it exclusively now as its so much more consistent. The key I found is to point it at a ceiling light when reading, much easier.
